I have a 2011 aveo and water is boiling in the bucket. and my fans only come on if the air is on is that normal? normally the temp gauge runs in the middle as normal I was told it was blown head gasket. and by another mechanic I was told two relays and a thermo. I replaces

Well, your car would likely be running noticably worse if it was a blown head gasket, so I doubt it is that. If both fans are running its not a relay problem. However, if your coolant is getting warm enough to boil, your radiator fan should be coming on before that.

I am guessing the water is boiling in the coolant reservoire? How did you find this out?

To me it sounds like a bad thermostat which is an easy fix.
