Bacisally the entire powertrain and engine electronics. There might be extras like gauges, aftermarket electronics maybe and the basic stuff like oil, coolant, hoses etc etc. The final price will depend on the deals you will get off the parts. It can cost you $5000 like it could cost you $8000, its really hard to tell.
You can be surprised how quickly all the little things add up, and im speaking from experience!

i am not speaking for Jason. But i think your best case to get a price on the swap would be for you to buy a wrecked cobalt ss that runs and drives, that would give you 90% of what you need, (aside from the custom/hybrid/swap pieces) then you have a definite price on the drivetrain, and are not buying pieces.
Keep in mind Jason would have to charge you additional for the removal of the drivetrain etc.. So his labor will go up.
locally i have seen wrecked cobalt ss going for as little as $3000. typically it is between $4000-5000.. but they tend to have more salvageable body parts. None of which you would need.
But as an example: he said $2500 in labor for the install, if you can pick up a $4500 SS, then figure $1000 in tear down / incidentals it would be @ $8000 installed. But labor prices are judged by who is doing the work.
Imho $2500 for the install sounds like a deal. I have heard of people in the VW world paying a lot more than that for more straightforward swaps. like cars of the same platforms, ie vr6 swap into a 2.0 both mk4 jetta. Hell for a $2500 estimate on labor i would probably take my car to him thats easier than me figuring it out myself.
Jason, can i ask a few questions on that:
Is that price a stock harness or standalone? I want the turbo ss swapped into mine, but the direct injection hasn't had good support with aftermarket standalone yet. I also need to keep the obd2 port for emissions testing. I know how involved the swap is for factory wiring, thats why i was just going to do it myself, but the aveo is the first "chevy" i've owned since high school. And i would spend more time doing the research than the swap.
I want those damn mounts, I can get the SS from my local junkyard. I need dem mounts!
They had sold the mounts in the past, they still might sell them though.
Does anyone know where I can buy them though, I need a link.

They don't just sell them online, you would have to get ahold of the shop as they probably would have to make them.
