Thermostat not getting to optimal temp

Had the thermostat replaced recently, check engine light came on the next day saying the thermostat was opening before optimal temp. Took it to my mechanic and he said it might be a miscommunication so he cleared it and said if it comes back to bring it in and they'll warranty out that one. Well it went a month before coming back on. Took it in, had it replaced, and the light came back that night. then 2 days later. Anyone have the same problem? My buddy thinks its cause it may be a thermostat that fits but not the right temp opening thermostat for my aveo.

I'm having this problem with my Ford. New thermostat installed but it seems like it fits a little bit loose and the rubber gasket in the old thermostat is thicker.

I'm assuming that if the thermostat is loose the fluid will just bypass it. In my case I will go back to the auto parts and buy the best thermostat they have. Cheap parts sometimes do not work.

When I was looking into my blown thermostat issue a few months ago, I had read a few recommendations to stick with the OEM AC Delco part.
