considering using the coilover shocks for the setup, just cutting out the springs and putting the air struts on

I forget where I had seen some of the kit shocks that basically is swapped out for your stock shocks for the front and I dont remember about the rear setup. Only thing is that the front setup was kinda limited on travel but its supposed to really improve your handling.

i would use a vw air set up. if you want low, (and not high, but high enough to drive) i would run mk2 fronts, and mk1 rears. with airbags i think the only thing you would need to worry about is the bag in the bag clearing everything, but if you go a cylinder style, i think it would be fine, or run the bag in the oem spring position..
my car is low on coils, i could adjust the mk2 front strut down until i was laying frame. so i know the air would do the same. The rear on my car i went to a mk1 strut, its all the way up.. and i am tucking tire. it can only go down from there.
if you want the most for it, i would cut/modify the oem spring seats, using plate. you would then be able to add travel by moving the seats further apart and use a taller universal bag, and also that is the first place the car hits itself when going down, so it would be like notching the frame essentially..
