A good idea of where to get the best information on how close to stock you can get would be to check out each coilover options adjustment options. I don't know specifically how close you'll be able to get, but one with the most threads for collars to move will give you a height closest to stock. But really, if you're on coilovers why wouldn't you get rid of that NASTY wheel gap?
Most coilovers at their highest ride height will probably be lower then the stock ride height, but don't let that scare you away.
